Taylor’s Ultimate Peruvian Garlic Chili
Ingredients
- 2 lbs ground beef, pork or a mix of the two
- 1 large onion, diced
- 2 tsp cumin
- 1 Tbsp plus 1 tsp of chili powder
- 1 tsp oregano
- 1 can Rotel tomatoes with chilies
- 1 16 oz. can chopped tomatoes with juice
- 1 bottle of beer (or 1 ½ cups water, or chicken or beef stock)
- ½ cup ketchup or tomato paste
- 1 cup Taylor’s Ultimate Peruvian-Style Garlic Sauce
- 1 large beef bouillon cube
- 2 Tbsp cornmeal to thicken
- 1 can corn, drained
- 1 can beans, drained
- Grated cheddar cheese
- Diced onions or scallions
- Sour cream
Instructions
- Brown the ground meat in a Dutch oven or any deep pan.
- When the meat is browned, add the onions and cook 3-4 minutes, stirring.
- Add everything through the bouillon cube and let simmer 20-30 minutes. This can be made 2-3 days ahead and refrigerated.
- Reheat on the stove and add the cornmeal, corn and beans.
- Garnish with cheese, onions, and sour cream if desired.
